Stink Beans, called Zawngtra in Hmar, is a favourite delicacy among various indigenous communities in Northeast India.
To eat, one has to first peel the outer covering skin of the beans with a peeler and the side strings removed with a knife.
It is usually prepared with Fermented Pork and Fermented Fish, along with either green chilli or dried red chilli. It can also be fried.
When the whole beans matured, the outer covering is disposed and only the seeds or pods is eaten raw, fried or cooked with other vegetables.
